Egg rolls

Tomorrow is my Dad’s 82nd birthday. He and mom will pop over and spend the night. I will make my version of Chinese food, which Dad has requested. The menu will be Tempura chicken with Sweet and sour sauce, Cabbage salad, Fried rice, Noodles and egg rolls.

We will spend Friday at the home track meet for Mude! My dad loves to follow Mude’s time, he and mom come to the meets, many times this is a 2-3 hour drive, they stand in the rain, sit on wet seats, cart chairs to sit in and cheer my son on! When we go over to help them, yard work or general clean up at the lake, they tell me they are so grateful, it’s too much for us! I laugh and think to myself, “there is no way I could ever repay one thing you have done for me” and it is true! I have told them this many times and it comes from deep within my heart!

They have stood firmly behind us, making a trip to Saudi over 20 times, signing for our little apartment when we moved back, giving me their Suburban so I did not have to buy a car, bringing groceries and buying clothing that first year! They have seen us through happy and sad times and we know they are always there standing firmly behind us! The list goes on and there is no way anything I do is enough but I can keep trying!

This is my recipe for Egg rolls and it is very loosely written down!  I will actually test it according to this recipe tomorrow and make sure it is perfect!

Ingredients

3 chicken breasts

1 onion chopped

2 carrots, peeled, grated

2 Bell green peppers, washed and chopped

2 Tbs. olive oil

Sauce

1 cup chicken broth

1/2 cup sugar

1/2 cup soy sauce

2 Tbs. peanut butter

Wrappers

1 package won ton wrappers

Directions

Chop chicken into small pieces and place in a pan with olive oil and onions. Saute until chicken is done. Add green peppers and carrots. Continue sauteing.

Mix sauce ingredients in a pan on the stove.

Add sauce to chicken mixture and stir well. Let this simmer, covered for 30 minutes. Drain chicken of all juice.

Lay a wrapper down flat and place a large spoon of chicken on one end of wrapper. Fold two ends over and roll egg roll tightly.  Make a flour-water paste and dab on the end  of wrapper to seal. Place seam side down on tray. Heat a pan of oil and fry egg rolls. Serve with homemade sweet and sour sauce!
