Tabouli

This is a basic recipe for Middle East Tabouli. This is a healthy fresh summer salad that is very popular in the Middle East and now the United States. Of course just as here in the United States, people all have their own version of this salad. So, this is my version that I learned from my mother in law as well as other friends. I combined these and made what my family likes.

Ingredients

1 cup bulgur wheat

3 bunches parsley washed and chopped

7 Roma tomatoes chopped into small pieces

2 cucumbers chopped

1/4 cup fresh mint, washed and chopped

juice of 3 lemons

1 clove garlic minced

1/8 cup olive oil

salt to taste

Soak bulgur in hot tap water for 30 to 60 minutes or until soft. Drain well.

Chop tomatoes and cucumbers. Chop parsley or put in food processor. Chop fresh mint.

Mince 1 clove garlic. Mix bulgur, parsley,mint, cucumbers, tomatoes and garlic.Add lemon juice, olive oil and salt to taste. Refrigerate and serve after a couple hours for best flavor.
