This is a wonderful, delicious dish prepared by Middle Eastern cooks. I learned how to make it from several different Lebanese friends. It is made in different ways but I tried to give the most authentic recipe that I know. It’s very delicious and fairly easy.
Ingredients
1 pound fresh green beans (fresh is best)
1 onion chopped
3 cloves garlic
12 roma tomatoes or fewer depending on type and size of tomato
olive oil
salt and pepper
Directions
Trim, wash and cut fresh green beans. Boil them for ten minutes and drain.
In a large pan put chopped onions and chopped garlic. Put enough olive oil to saute. Chop tomatoes into large chunks and add to onion mixture. Add salt and pepper. Cover pan and let cook for approximately 30 minutes. Stir frequently until this mixture turns into a sauce. Add green beans and stir well. At this time I taste and add salt and pepper according to my flavor preference. Cover and cook an additional 30 minutes. Again this can be changed depending on your taste. You might not want the green beans to cook as long or possibly longer. I like them to be soft and really in with the sauce. The flavor is better the next day!
Traditionally eaten with Arabic bread.

I made this before and it didn’t come out saucy. I think maybe I used too much onion? Plus, it had a slight bitter taste. I thought maybe add different spices? I couldn’t get it right.

I have a pan full of tomatoes and use as many as you like. I usually just go by what looks good since i have made it tons of times so i tried to measure but hard haha, if the green beans are in season fresh if not maybe frozen? I bet that was the bitter flavor? Hope it works out
