Pancit

After living in Riyadh for two years we moved to Al-Khobar where we lived on a Western compound for a year. This is where I met many new friends. One of them was a wonderful Malaysian lady named Diane. One day she invited a few of us over to her villa to show us how to make Pancit. I had never heard of such a thing and was amazed by this dish.

Ingredients

1 package rice sticks

2 chicken breasts cut into pieces

1 onion chopped

2 cloves garlic chopped

2 carrots peeled and sliced

1 red bell pepper cut into slices

broccoli cut into pieces

1/4 cup cabbage chopped

Sauce

1/2 cup chicken stock

1/8 cup soy sauce

3 Tbs. olive oil

Directions

Soak rice sticks in warm water for 15-30 minutes

Drain rice sticks and cut into pieces.

In a pan, put olive oil, onions and chicken. Saute and cook chicken.

When chicken is done, add all vegetables.

Stir fry until crisp tender. Add broth and soy sauce, add noodles and toss, stir fry noodles at this time tossing and cooking well. This amount shown is double, so using one package of rice sticks and a large pan will work well for cooking the noodles.

Cover pan and cook until noodles are done 5-10 minutes. When noodles are done spoon onto plate and serve.

  1. What an interesting dish, my grandfather lived and taught in Malaysia for a number of years, he always says Malaysians are some of the kindest people he has ever met 🙂
