When I first arrived back home I worked as a cook at a girls co-op on campus. I threw these together and the girls all loved them. I have to admit they are very delicious!
Ingredients
1 cup butter softened
2 cups sugar
4 eggs
3/4 cup baking cocoa
1/4 tsp. salt
1 level cup flour
crushed cookies–Mint Oreo cookies crushed
Directions
Preheat oven to 350 degrees
Prepare large baking pan by greasing and flouring.
In a mixing bowl, place butter and sugar, mix until fluffy, add eggs one at a time and mix well. Turn mixer down and add cocoa. Mix until well incorporated, add salt, mix. Add the flour and mix well.
Using a spoon mix in 1/2 cup cookie crumbs.
Spread onto baking pan and put in oven.
Let bake for around 30 minutes.
When done remove from oven and cool completely.
Frosting
5 cups powdered sugar
1/2 cup butter softened
1/2 cup milk
Mix sugar and butter on low and add milk, mix until fluffy.
Spread onto cooled brownies and top with cookie crumbs.
